The tip of the Cap Classique sword: Colmant

Colmant

Dear Reader,

Established in 2005 in Franschhoek, the Colmant winery was the very first in South Africa exclusively dedicated to the production of Cap Classique. Jean-Philippe (JP) Colmant and Paul Gerber make for a formidable team in the realm of South African bubbly. With an average of just 60,000 bottles of Cap Classique produced each year, across six different cuvées, their deep understanding of the traditional method (or méthode champenoise) of making sparkling wine in South Africa positions them at the pinnacle of the market.

Each cuvée of Colmant Cap Classique, from the flagship Brut Réserve to the limited release Absolu dosage zero, is a multi-vintage blend. More commonly referred to as non-vintage, the blending of a current vintage with a selection of reserve wine means that in a warmer climate like South Africa’s, Colmant can achieve ultimate balance and complexity in its Cap Classique.

The gem of the Colmant range is the Cap Classique Absolu dosage zero. It is a blend of their very best Chardonnay base wines from Franschhoek, Elgin and Robertson that has spent seven years on the lees and almost one year of extra maturation on the cork. The time spent on the lees and the balance of the wine itself allows for no dosage. Today marks the release of the fifth edition of Absolu. An average of just 900 bottles are produced.

Due to its limited availability, orders of the Absolu are limited to two bottles per person. All of the cuvées are listed above – please make up your own selection and enjoy some of the very best Cap Classique that South Africa has to offer.
