There's Sauvignon Blanc, and then there's Sauvignon Blanc as imagined by François Cotat. Devotees can tell you that what happens in this modest cellar in Chavignol is one part winemaking, three parts magic.
Named for its steepness, the "Damned Mountains" present a challenge during harvest. The Cotat family has devised a system to help with this problem - sliding down the hill on a cushion, grabbing grapes on the way down.

Provided it is planted in the right place, Sauvignon Blanc is not particularly difficult to make. However, to have renowned wine critic Robert Parker describing your wine as “some of the finest Sauvignon Blancs I have ever put to my lips” is no mean feat. It’s no surprise that Francois Cotat is regarded as one of the best winemakers in Sancerre.
The secret lies in Cotat’s biodynamic methods: old vines which are harvested late and a philosophy of letting the fruit do its own thing. This results in a one-of-a-kind Sauvignon Blanc, rich and deeply concentrated. They also show excellent capacity for improving with age.
We are lucky enough to receive an allocation of 25 cases from this much sought-after domaine. Fans must not miss out - this is a wine that will blow away any preconceptions you may have about Sauvignon Blanc.
