Maison Louis Bouillot

Maison Louis Bouillot, founded in 1877 and situated in the heart of Nuit-Saint-Georges, is dedicated solely to the creation of the Burgundian sparkling wine, Crémant de Bourgogne.

Crémant de Bourgogne has had AOC (Appellation d’Origine Contrôlée) status since 1975 and it incorporates parts of Burgundy from north south: Chablis, Châtillonnais, Côte de Nuits, Côte de Beaune, Côte Chalonnaise, Côte Mâconnaise and Beaujolais. Such diversity means that a wide range of different base wines can be created that reflect their terroir. Grapes used for the creation of Crémant include Pinot Noir, Chardonnay, Gamay Noir and Aligoté.

The wine is made using the traditional method (Méthode Champenoise or Méthode Traditionnelle) like in Champagne. That is to say, the transformation of the base wine to sparkling wine occurs entirely inside the bottle following a second stage of fermentation.

At Maison Louis Bouillot, the grapes are picked by hand before gentle pressing to preserve the quality of the musts. After cold settling, alcoholic fermentation takes place in temperature-controlled vats. Malolactic fermentation is deliberately stopped to preserve the rich, fruity style of the base wines. Following the second fermentation inside the bottle, the wine is aged on the lees for more than 12 months.
