Oak (5/10% new) and tank for 11 to 13 months
Siblings Alix and Etienne de Montille manage their home estate, the Domaine de Montille in Volnay, which has been in the family for over 300 years. Though relatively small, the vineyards are located in prime areas and comprise a total of 17 hectares. This is composed of 2 hectares of grand cru, 15 hectares of premier cru, along with a hectare each of Nuits-Saint-Georges and Bourgogne rouge respectively.
The de Montille approach produces a hand-crafted classical and authentic Burgundy that expresses the subtle but fabulous nuances in personality of their different terroirs. Each year the commitment is to produce pure, elegant, naturally balanced, vibrant wines. With age, they develop a unique harmony and complexity. More recent vintages have tended to shift to be more accessible in their youth, without departing from the family’s traditional convictions.
The domaine moved to organic farming in 1995 and converted to total biodynamic farming in 2005. Total respect for the raw material from grapes to bottle is key, with every effort made to produce the ripest, most balanced wine from the healthiest fruit.
About 20% to 30% new oak is used and wines are given a long-ageing, with a late malolactic fermentation. Fining and filtration are only used when absolutely necessary.
Building on the already impressive foundation laid by the generations before them, Alix and Etienne have fine-tuned their wines to carry them well into the 21st century and to protect its reputation as one of the finest domaines in the Côte-d’Or.
